If your kiddos are anything like my trio they love burning a hole in your pocket. They want to eat out breakfast, lunch and dinner! But the way this mama bank account is set up it’s not happening! So I have found a way to copycat some of their favorites!
This particular meal happens to be the best breakfast steak burrito they’ve ever tasted, compliments to Taco Bell for the idea. So what I use to make this meal is precooked beef fajita meat (remember it’s breakfast, these kids are waking up starving 😅 their words not mine) shredded cheese, eggs, the small tortilla shells, pico de Gallo mix and sour cream. I also use chopped and diced potatoes instead of using full hash browns patties. I think that’s a preference for my household because I have picky eaters.
What you’ll need to do is start skillet frying your diced potatoes until their golden or at least until their 3/4 golden. While that’s cooking defrost your beef fajita meat if you haven’t already. Another quick hack is most microwaves have defrost option and to defrost the beef fajita meat it only takes about 3 mins depending on the quantity. Also if you want beef sausage is also a good option for meats to use! After defrosting tour meat you cook it in a skillet and set it to the side. Then you make your eggs. Once all your fixings are done everything is is self explanatory. Top everything on a tortilla shell, fry it on the side , top it off with some Taco Bell sauce and enjoy! Breakfast the whole house can enjoy 😊
